Elk in Peppers and Onions
Elk Jalapeno Poppers

Ingredients:
(22) jalapenos
8 oz. of cream cheese
1 Cup Parmesan cheese
1 pound of pork
Ranch Dressing
Preparation:
Slice jalapenos lengthwise & seed
Fry sausage till pink is gone
Mix softened cream cheese and Parmesan together
Add sausage
Stuff 1 tablespoon into each pepper
Place into (2) un-greased baking dishes
Bake at 425 degree's for 15- 20 minutes.
Serve and dip into Ranch Dressing
Ingredients: 1 med onion 1/3 cup of butter, 1/4 cup, of flour dash of salt dash of nutmeg, dash of pepper, 1 cup of milk, 1/3 cup of chicken broth, 1/4 cup grated Swiss cheese and 2 TB. Parmesan cheese. Preparation:
Sauté onion in butter until soft
Stir in flour and spices, cook until bubbling
Remove from heat. Stir in milk and broth.
Cook over medium heat, stirring constantly until mixture thickens.
Lower heat and cook, stirring for 2 minutes.
Add cheeses and stir until melted.
Ingredients:
Have the butcher grind beef with a 15% pork fat mix
(1) lb. of beef
(1) lb. chuck steak
Preparation:
Cut the chuck steak into 1" cubes and fry up with chili seasoning and an onion.
Mix in a couple of cans of hot chili beans and a can of tomatoe sauce.
Slow cook overnight
Serve with grated cheese, onions and tortillas.
You will have some awesome elk chili.
Ingredients:
2 Elk steaks (you may also subsitute Elk meat with Venison)
1 large green pepper
1 large yellow onion
Kosher Salt Course
Ground Black Pepper
(4) Tablespoons of olive oil
2 pinches of season salt
Flour
Favorite big game rub
1/2-cup good white wine
1 - 16 oz can Beef Broth
Pound the Elk steaks to 1/2 original thickness
Preparation:
Liberally season both sides of steak with salt and pepper and coat with flour.
Brown in pan (pan must have a cover and be able to go into the oven) in olive oil.
Take out and set aside.
Slice peppers into strips
Sauté onion, garlic and pepper until tender and set aside.
Add white wine, beef broth and season, salt and reduce to 1/2.
Mix peppers, onions, and garlic to the broth and lay Elk Steaks on top.
Cover and cook 1/2 hour in 390- degree oven.
Serve Steak with baked potato covered with the sauce and peppers and onions.
